  • Ingredients: First -•
  • 1 c. flour,
  • 1 tsp. baking powder.
  • 1 tsp. baking soda,
  • 3/4 tsp. salt,
  • next -•
  • 1/2 c. sugar,
  • 1/2 c. brown sugar, packed,
  • 1/2 c. butter,
  • 1 egg,
  • 1/2 tsp. vanilla,
  • finally -•
  • 1 c. rolled oats,
  • 1 c. shredded coconut.

Directions;
Sift flour, baking powder, baking soda and salt together and set aside. Cream butter and the 2 sugars until light and fluffy, then add egg and mix well. Add vanilla and flour mixture. Add oats and coconut, and mix until blended. Shape into small balls, flatten slightly with a fork and place on an un-greased or a parchment-paper-lined cookie sheet. Bake at 350 degrees F. until golden (approx. 8 to 9 minutes).*

* I like my cookies chewy so I may take them out a bit earlier. Some people like them crispy so leave it at that time. You have to decide.
